Homemade Condiments – WHO KNEW!

So I was on the hunt last night for today's Recipe Friday and I found a really interesting meal to make that I can eat right now while training for my Figure Competition EXCEPT that it has MAYO in it. Hmmmmm what to do? Mayo is definitely NOT on my list of things I can eat for the next 15 weeks but YEP, BUT if I can find a HOMEMADE healthy mayo recipe..... NOW that might work. SO that got me to thinking about homemade condiments. I mean who doesn't like KETCHUP or MAYO or even BBQ sauce? But if you like them and have read the labels then you know they have LOTS OF CRAP in them. Sugars, chemicals and basically lots of stuff that is NOT healthy for you and they are not something I can eat while getting my body-fat LOW. I mean YOU KNOW that chemicals in your foods disrupts systems in your body and creates problems sooooo I can't LET THAT HAPPEN by eating certain foods/condiments while getting into TIP TOP shape.  One of the many reasons it is recommended that you eat as close to as GOD MADE IT as possible. Now if you have been following this blog you KNOW that I post ALL kinds of recipes with the standard requirements being that the recipes have to be simple, quick and with the minimum amount of ingredients and with ingredients I recognize as from this planet or at least MY PLANET lol.

So I decided for today I would make this post a resource for YOU to have for making you own condiments. Now I am going to include what I think are the most popular and common condiments like Ketchup and Mayo. In looking at many, many healthy and unhealthy recipes for condiments it just seems to me that there really is an almost endless VARIETY of them. WHO KNEW? In fact, who knew you could make your OWN MAYO or your own KETCHUP? And from the comments on some of these sites they seem to be AWESOME. So this week I won't be cooking but next Recipe Friday I will make the recipe I found yesterday and make some homemade MAYO for it too. YES that will be interesting. Way out of my comfort zone.

Keeper of the Home is the first blog site I stumbled upon that looked and sounded like a HEALTHY Ketchup recipe. If you will notice it is short and sweet and consists of ingredients that are ALL healthy and in their natural state. When checking out the page make sure to check out the comments left by those that have tried this recipe. Seems like a winner and I am excited to give it a try. Here is the recipe:

Klassic Ketchup

1 6-oz can of tomato paste
1 1/2 Tbsp vinegar
1 Tbsp sweetener
1 tsp Braggs or soy sauce
1/4 tsp dried basil
1/8 tsp paprika
1/8 tsp salt
2 1/2 Tbsp water

Add all ingredients together in a small pot or saucepan, simmering for 10-15 minutes on low-medium heat, stirring often. Allow to cool, then keep in the refrigerator. Usually lasts 2-3 weeks, if you make sure it is well sealed (otherwise it can spoil faster).

I will tell you that this is the only one that I saw that had you COOK the ingredients. Most of the other recipes had brown sugar and you basically just threw it all together and let it sit for awhile in the frig. SO this lady who's blog this is got this recipe from a vegan book which she writes about at her blog site. She is also a Christian mom and her site has lots of GREAT info about healthy recipes and keeping the home in order so make sure to check it out and bookmark it if you LIKE it.

Next the very important condiment MAYO. Can't make my recipe next week without it and besides it is GOOD TO KNOW that I can make a homemade Mayo and it can be tasty and healthy too. Now in looking through different recipes for this condiment it was again ALL about the ingredients. Listen I CANNOT have ANY SUGAR, or ANY CHEMICALS or any simple carbs so any form of sugar is a NO GO. So reviewing different recipes for MAYO this is the one that met all my requirements. It seems easy, quick and has recognizable ingredients and NO ingredients that I CANNOT have. YAY! I found the recipe at The Nourishing Gourmet and here is the recipe:

HOMEMADE MAYONNAISE
Equipment:
You will need a stick blender. I bought this blender in order to make my mayo, but have found it to be a great kitchen tool for many other things. I can puree my tomato soup right in the pot, and have found it to be very useful in pureeing things for my baby as well. It is super easy to clean, which is a big plus for me!
 
Ingredients:
2-4 egg yolks (I use farm fresh eggs from my local farmer)
½ tsp. mustard
1-2 Tbsp. lemon juice (of course fresh is optimal, but you’ll notice below I cheated with store bought stuff L )
1 tsp. balsamic vinegar
2 tsp. white wine vinegar
1 tsp. celtic sea salt
¾ c. oil- hemp or grapeseed (I use grapeseed)
 
1. Combine everything EXCEPT the oil. I use a container just large enough for the stick blender to go into.
2. Mix with a stick blender until creamy.
3. While blending, add the oil in small increments and mix until it’s homogenized. My daughter holds the container in place while I pour oil with one hand and with the other I lift the blender up and down as it’s blending- the quick up and down motion helps the mixture to homogenize, and it will thicken right up.
 

This was a guest post on the site and really I think you can make the recipe without the hand blender. In fact in the comments other folks wrote about different experiences with making homemade mayo. Now what is interesting about this site The Nourishing Gourmet is that she also likes to keep meals simple, healthy and she preaches about being frugal sooooo ALL good things for the rest of us looking for the same. Make sure to check out her site and look around a bit. I can guarantee I will be making a few of her recipes. Maybe even for Recipe Friday.
