Baked Eggs with Salsa & Black Beans

This Baked Eggs with salsa & black beans recipe, just three ingredients where all 3 ingredients are HEALTHY and about 5 minutes max to make and really WHY wouldn't you try this recipe? Especially if you like eggs, black beans and salsa? So I was on the hunt last week to find a recipe that had black beans because I am on a craving for these lately and I wanted eggs too. I got to thinking about an easy, high protein, healthy and cheap meal that anyone could make. And yep I found one. Here is a picture of my finished product. YUMMY!

I will admit that I came across this recipe last weekend and initially made it then but I improvised with it a LOT. Like I basically scrambled eggs, heated up the rinsed beans and salsa and put them on top of the scrambled eggs and topped with diced onions and sprinkle of low fat mozzarella cheese. Now today I decided to make the recipe like it was written. I will tell you later which one we liked better and why.

  • 1 cup(s) salsa
  • 1/3 cup(s) canned black beans drained and rinsed
  • 2 eggs


  1. Combine 1  cup of salsa and 1/3 cup canned black beans, drained and rinsed, in a skillet.  Bring to boil and reduce to a simmer.  Using a spoon, make two 2-inch indentations in the mixture so you can see the bottom of the skillet.  Crack 1 egg into each indentation.  Transfer skillet to a 400 degree oven and cook, uncovered, until eggs are set, 8 to 10 minutes (or cover and cook eggs on a stove top, until they are set, 2 to 3 minutes).  Carefully transfer to two bowls and top with chopped onions, sour cream, cilantro and guacamole

OK so I will tell you I added more beans. I put one cup of salsa in and one cup of beans. I also choose to cover the pan and cook on the top of the stove. Took literally 10 min from start to finish. Here are some pictures of the process of making this baked eggs with salsa & black beans meal.

 Eggs opened and cooked in the beans and salsa. Covered pan to cook and done in just a few minutes.

Adding some diced onions and shredded fat free mozzarella cheese! You saw the finished product in the picture with me above. Does that not look incredible? This meal was for my husband who weighs about 180lbs. For me I ate about half that meal. So it was one egg and 1/2 cup of salsa and 1/2 cup of black beans. Great meal, easy meal, quick meal and very, very tasty meal.

OK so I told you earlier that I made it with scrambled eggs last weekend and made the recipe again today with the baked eggs and the yolks were runny. Much, much tastier TODAY versus with the scrambled eggs. Don't know if it's because of the runny eggs or the egg whites through out the beans and salsa but it was just more moist versus DRY with the scrambled eggs. But hey, you try it yourself. This is such a simple meal with ingredients you may regularly have in your frig and pantry so try it as many ways as you can think of.

I LOVE this recipe and so does the rest of my family, kids too. This post is a re-post from last year and I will tell you that since I first discovered this recipe and used it here for Recipe FRIDAY I have made it COUNTLESS times. For dinner, for lunch and yep even occassionally for breakfast. Really too many times to count. If you LIKE the ingredients, you will LOVE this recipe for the taste and the convenience. EASY, EASY to make. And really you can use any beans that you want to. I have used it with kidney beans, white beans, black beans and I have even combined beans.
