Baked Meatballs with Spaghetti Squash!
I don't know about you but sometimes I just get plain scared about HOW 'the recipe' is going to turn out. In today's recipe my biggest concern was that I was making changes to the recipe and substituting lean hamburger for turkey burger. I guess the reason I worry about it is that I MAKE SO MUCH, then if it doesn't turn out tasty, hmmmmmm the question becomes WHAT AM I GOING TO DO WITH ALL THIS CRAPPY food? lol
Fortunately that has only happen ONCE since I started this blog and yes I DID NOT write about that recipe lol AND I made everyone try it around me and put some in to-go containers and gave EVERYONE I know a sample - lucky them.
In thinking about my tactic to handle any un-tasty recipe's I am NOW thinking maybe this is NOT the way to promote healthy eating... YES I did get rid of the crappy food without throwing it out but, but, but hmmmmm maybe I need to start just throwing it out and giving everyone ONLY samples of the GREAT tasting stuff. Yes that will be my NEW strategy.
This recipe today caught my eye as usual on Pinterest.
I just LOVE that site for healthy recipes. Just click on the picture and it takes you to a website and from there you get the recipe and in the process you get to scope out NEW websites and expand the horizons. Like really, every time I click on the picture to get to the website that has the recipe I am curious about, I am always surprised by the website.
There are SOOOOOO many food website out there. Really thank God for Pinterest because I can see pics and easily get the recipe and see real quick if it is HEALTHY and something THE family might like and if not move on to the next one. If I like it I can put it on my Healthy Recipe Board and go back to it any time I want to make it.
YES simplicity. Keeps all my recipes in one spot even if every ONE OF THEM is from a different website. LOVE IT! If you have not checked out Pinterest yet and are interested in healthy recipes I say get to it 🙂

2 eggs, beaten with 1/2 cup milk
1/2 cup grated Parmesan
1 cup panko or bread crumbs
1 small onion, minced or grated (1/2 a large onion)
2-3 cloves garlic, minced
1/2 teaspoon oregano
1 teaspoon salt
freshly ground pepper to taste
1/4 cup minced fresh flat-leaf parsley or basil Mix all ingredients with hands. Form into golfball sized meatballs. Bake at 350 degrees for 30 minutes.
OK so I followed the recipe exactly except I doubled it and substituted turkey burger for lean hamburger.
The recipe was easy to make and they tasted great plain. To make it a meal I paired it with Spaghetti Squash.
To make the Spaghetti Squash I just poked holes in it, microwaved it for 10 min, scooped out the seeds after cutting it in half and used a fork to get the 'spaghetti' out of the squash. LOL I remember just a few short months ago just being wary about trying a spaghetti squash and now LOVE THEM.
So I put some spaghetti squash with 2 meatballs and a low sodium, low sugar marinara sauce on top with a sprinkle of low fat Mozzarella cheese and can you say YUMMY! HEALTHY, tasty, complete and very filling meal in about 30 min.
So give it a try. Don't be afraid to mix and match ingredients. What I am learning is that is part of the FUN of cooking. Did I say FUN OF COOKING? WOW, that means I need a break. Stop back if you give this recipe and meal a try and let us know HOW it turned out for you.
