This week's Recipe FRIDAY is Blueberry Oatmeal Muffins. A fantastic healthy, easy and tasty muffin you, your family and friends will love. So often we think that there isn't any great tasty healthy foods for us to eat but I am here to tell you that is not so. Just take a few minutes and give one of these recipes I post every Friday a try and see what you think.
Sometimes it is just about stepping out of our eating comfort zone and trying NEW things before we discover that there is a whole other world out there and we've been missing it. Most of the recipes I post are EASY, healthy and tasty so pick one and give it a try this week.
When I made these we had company over and they just could not believe how good these tasted 'with all those healthy ingredients' in them lol
Here is the recipe:
Blueberry Oatmeal Muffins2 1/2 c oatmeal 1 c Greek yogurt 2 eggs 1/2 c baking stevia 1 1/2 tsp Baking Powder 1/2 tsp Baking Soda 1 1/2 c blueberries 1 tsp lemon juice
Add all ingredients except blueberries together and blend. Add blueberries into the blended mix and place in muffin tray that is silicone or that has the tin foil liners. Oatmeal mix will stick if you just use regular muffin liners. Bake at 400 degrees for 20-25 minutes.

And that it is our Blueberry Oatmeal Muffins. Nice, simple, easy and basic recipe that my family LOVED. Very tasty and has quality ingredients so give this recipe a try yourself. If you don't like blueberries you can substitute strawberries or blackberries or any BERRY fruit.
