Cauliflower Pizza Bites




The Cauliflower Pizza Bites that my daughter Erica and I made.  You might have noticed that there isn't anything on top of these bites and that is because we DIPPED these mini muffins into marinara sauce instead of making as mini pizza's. I will tell you right from the get go here that my son Brent LOVED these straight up. So did I. Incredibly they are like BREAD. And seeing as Brent and I are both simple carb LOVERS, now I didn't say eater's ALL the time of the bread products but we do LOVE the texture and taste and fullness you get from bread like products soooo.... YEP this recipe hit the mark with us.

Now it is made mostly with CAULIFLOWER, incredibly but it still TASTES wonderful and FILLING like, like, like those not so good for us products.  Highly recommend this recipe for something different that is HEALTHY.

Cauliflower Pizza Bites

2 cups grated cauliflower (washed and DRIED! Very important to DRY CAULIFLOWER out)
1/2 cup Egg whites or 2 eggs whites if not using substitutes
1 cup 1% Cottage Cheese (drained)
1 tsp Oregano
1/4 tsp Garlic Powder
1 tbsp Coconut Oil
1-2 tbsp Frank's Hot Sauce
Pre-heat oven to 450 degrees.
Spray muffin tin using healthy cooking spray.
Stir fry DRIED grated "CAULIFLOWER RICE" about 6-8 minutes. Place in bowl and let cool.
Place all other ingredients in food processor and blend until smooth.
Combine cauliflower with blended ingredients and mix completely.
Spoon our mixture into muffin tin.
Bake for 25-30 minutes.
Remove from oven and let cool down before removing from muffin tin*** Very important*** If not cooled down will break apart.

I have to admit here that this whole grating of the cauliflower for me tends to be a little messy. I used my food processor but still you get some pieces everywhere and I still haven't come up with a system to keep it contained. I dried the cauliflower with a couple paper towels and I understood if it wasn't dry it just wouldn't stick together right. SO I made sure we dried it somewhat. We also made sure to let the muffins cool down for 20 minutes or so before taking them out of tin.

They were delicious. Really you can put whatever you want on top. Can put pizza sauce and cheese and meat or really whatever. Sky's the limit. Go for it and stop back and let us know about what you create.
