Chocolate Coconut Macaroon Homemade Lara Bars

Here are the kids eating the finished product, Chocolate Coconut Macaroon Homemade Lara Bars, and before I get into all the particulars of my experience making and eating these Lara bars or as we made them Lara balls - THEY ARE DELICIOUS! I believe I would count them as TREATS. Yes they are healthy and we did put in dark chocolate chips and there is coconut too! Hmmmm Texture was solid. In fact while using food processor on the nuts I definitely processed into powder and did NOT want to do that but still thick, solid texture and very, very SWEET! Like a treat!

Alright so I stumbled across this website damyhealth and read this blog and said to myself just like I have a few times before - 'let's try to make this'. Now that I am venturing forth and trying NEW things in the kitchen and I have a goal to have my kids becoming GREAT cooks early on so they can do the cooking in the next few years well this recipe would work for us. It looked like an easy recipe and a tasty one too. I already had most of the ingredients and there is NO cooking or baking just mixing so really, how hard could it be?

Here is my beautiful daughter Erica with ALL our ingredients for our Lara Bars. See look, just what, 5 ingredients? Can't go wrong with that kind of recipe lol. So here is the recipe or list of ingredients and what I did with it based on this above website!!

 

Chocolate Coconut Macaroon

  • 1/3 c cashews
  • 1/4 c seedless/pitted whole dates
  • 3 tbsp Dark Chocolate
  • 1/8 tsp salt
  • 1/4 c shredded coconut

 

What I did was put dates, chocolate and coconut in the food processor. Then I put nuts in the food processor and did not pulse like I was suppose to and instead got POWDER. Hmmm so Erica and I mixed salt and all the other ingredients together and rolled them into balls.

My son Brent took the pictures and for some reason was NOT interested in helping us make them. Mr. future Chef wasn't interested in cooking this day but they LOVED eating them lol. Now this mixture was a little powdery so we put a little warm water into the mixture to help us mix it up better. After we were ALL finished we decided to roll some of the balls into coconut and this final picture is the finished result. LOVED them and we are going to try some of the other recipes from this blog site. Make sure to check it out for yourself. Maybe you will get inspired to get into the kitchen and try some NEW, healthy recipes for yourself and your family.
