Here is my beautiful daughter Erica helping with today's recipe. What she is doing is stirring the garlic, diced onion, diced red, green and yellow peppers so they don't burn while sauteing. She is a BIG help in the kitchen. So I got the idea for this recipe from, can you believe it, a facebook post. Yep again while scrolling through posts someone, again can't remember who, wrote about making hard boiled eggs in a muffin tin baked in the oven. Didn't write HOW so I looked it up through Google and found really FANCY recipes that I just was NOT interested in doing. I am all about keep it simple stupid in everything including COOKING. The easier and quicker for me is always the better. So it is required that the recipe must be SIMPLE as in few ingredients and prep NOT too complicated or it will NOT be posted here. And of course HEALTHY is also up there with importance!!
So the fancy recipe had all kinds of ingredients put in the bottom of the each muffin bottom and the egg just cracked open on top and then BAKE so that is what I did. Except that I made this saute mix added brown rice because I already had some cooked in the frig and I wanted to make each egg muffin a complete meal. Here is a picture of the process.
I would have to say what has really helped me with this COOKING thing is the ability to improvise while cooking. Like take ideas of how to cook a recipe and mix and match stuff that you KNOW you like and CREATING a meal that is easy, tasty and healthy. That is a WIN for the whole family then. This recipe I am including here is a little of this and a little of that and not really a recipe at all but instead a throw stuff together and open some eggs on top of it and bake in the oven till done. CHOW time!! Lol
SO here goes - we will call these:
EGGS in Muffin Tin
I already had red, green, yellow peppers and onions already cut up so I just had to grab some out and DICE!!2 garlic wedges finely diced 1/2 c green peppers 1/2c red peppers 1/2 c yellow peppers 1 c diced onions 1 1/2 c brown rice 12 eggs sprinkles parmesan cheese So we sauteed the garlic, peppers and onions till getting brown then added the brown rice just till heated up. The brown rice was already cooked. Sprayed the muffin tin with Olive Oil Spray. Scooped in the saute mix into the bottom of tin. Broke eggs on top of the mix. I also made some without the sauteed ingredients and just the eggs for my kids as they DISLIKE onions. Cook for 15 min at 350* degrees. Take pan out and sprinkle with parmesan. Place tin back in oven for 5 more minutes.
How did it turn out? Delicious. The kids pretty much just ate hard boiled eggs cooked in a tin in the oven lol. Lynn and I had the tasty stuff. We loved it and the kids did too. Here are a few more pictures.
The kids also had some sliced kiwi so it was a nice complete meal for them. Lynn and I had our complete meal with each egg muffin we had. We had our protein with the eggs. Our carbs with all the veggies and the brown rice and some fat with the Olive Oil and the cheese. YAY a quick, easy and tasty MEAL in about 30 minutes or so. That is a win.
