Every Friday I review a recipe that looks easy, healthy and tasty so that you and me, we can find foods that we can and will eat as we continue on our journey to 'getting and living healthy and fit, inside and out'. I know before I started getting health and fit, I was of the mistaken mindset that if a food or meal was healthy, it then also tasted like crap. NOT SO! There really are lots of meals, snacks and side dishes that you can eat that will HELP you get healthy and fit and that taste FANTASTIC. Incredible but true. This Recipe Friday Review: Low Calorie Triple Chocolate Chunk Muffin is one of them.
This week I found this recipe Low Calorie Triple Chocolate Chunk Muffins on Pinterest. Yes, I love pinterest for all the GREAT recipes and ideas that are to be found there. Do to this being Valentines Day week, I thought, 'Why not a sweet recipe?' Yep, a sweet recipe that uses Stevia as a sweetener and that has quality ingredients like unsweetened apple sauce and old fashioned oatmeal... Yes, I look at ingredients and if it looks like all healthy ingredients then it's a go. The website that the picture I saw on Pinterest took me to, after I clicked on it, is Sixsistersstuff!
Here is the RECIPE from their site:
1-3/4 cup old fashioned oats
3 egg whites
3/4 cup unsweetened cocoa
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract
1/2 cup plain Greek yogurt (or regular plain low fat yogurt)
1/2 teaspoon cream of tartar (or 1-1/2 tablespoons vinegar)
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1/4 teaspoon salt
1 cup hot water
1 cup sugar substitute (like Splenda granular) OR 1/4 cup + 2 tablespoons Stevia
1/2 cup semi-sweet chocolate chips
Preheat oven to 350 degrees. Line 2 (12-cup) muffin pans with cupcake liners, or spray muffin tin with non-stick cooking spray. Set aside.
In a blender (or food processor), mix all of the ingredients together, except for the chocolate chips. Blend until oats are ground and mixture is smooth.
Place mixture in a bowl and gently stir in 1/4 cup of chocolate chips (set the rest aside). Scoop mixture into prepared muffin pans.
Place muffins tins in the oven for 10 minutes. After 10 minutes, remove muffins from the oven (but don’t shut oven off), and distribute the other half (1/4 cup) of the chocolate chips on top of each muffin.*
Place the muffins back into the oven and bake for an additional 2-5 minutes, or until a toothpick comes out clean. *Note, you could skip this step by putting all of the chips in the batter, and baking the muffins for 12-15 min straight, but this method gives the muffins the traditional ‘VitaTop Muffin’ look with the chocolate chips on top!Cool muffins before removing from pan.

Are you wondering HOW they turned out or can you guess from my picture at the top or bottom of this post? Yes, they were FANTASTIC. I mean, probably can't eat just one good. Hubs and kids could NOT stop eating them. Lol and me too 🙂 If you are looking for a sweet muffin recipe that tastes INCREDIBLE, you have found it. The only part I did not like is that it seems like some of the mix sticks to the bottom of the muffin wrap ;( but hahaha not that big a deal.
