Today's Recipe FRIDAY is Oopsies, an alternative to bread. At least that is how this recipe was presented to me (us) on facebook. Yep once again it was a post on facebook that said this recipe was used to replace bread for peeps and well how could I not try it. Plus look at the picture, it just looks delicious.

So well I LOVED the name. I mean Oopsies, sorta sounds like a big OOpps you know what I mean? Lol

Here it is:


3 eggs
100 grams (3.5 oz) of cream cheese (I used lite cream cheese)
a pinch of salt
1/2 tsp baking powder (can be excluded)


Separate the eggs, with the egg whites in one bowl and the egg yolks in another.

Whip the egg whites together with the salt until very stiff. You should be able to turn bowl over without the egg whites moving.

Mix the egg yolks and the cream cheese well. If you choose, add the psyllium seed  - husk and baking powder (this makes oopsies more bread-like).

Gently fold the egg whites into the egg yolk mix - try to keep the air in the egg whites.

Put 6-8 oopsies on a baking tray. Yes spray baking try with oil.

Bake in middle of oven at 300 degrees for about 25 minutes until they turn golden.

Apparently you can use oopsies as bread or use them as a bun for a hamburg. You can put different kinds of seeds on them before baking like poopy, seasame or sunflower.

I also thought after trying them that maybe putting some onion powder or garlic powder in them would work if you like those flavors. Really can add any seasoning flavors for all kinds of tastes.

Well alrighty and there they are. Looks delish huh? SO what did I think of them? OK well I did like them but I did not use them as a sandwich however I do think they would work well like that. My husband loved them and literally ate them all up just like you see them in the finished picture. My kids, hmmmmm didn't like them so much. BUT I think if they had Ooopsies with like tuna fish or quality lunch meal or turkey they might have liked it. In fact, next time I make these it will be with the intention of making sandwiches with them.

Now they are not dense but fluffy and made with eggs so even though they can replace bread the texture is different so be prepared for that. I do think this is a winning recipe as they were QUICK, easy and healthy to make so be sure to give them a try yourself.
