Yes this is a picture of me eating my Recipe FRIDAY recipe this AM. WHY you might ask? Well because this is a crock pot meal that is EASY, healthy and delish and required cooking times to be either an hour in a sauce pan or 3-5 hrs in a crock pot. For me it ended up being 9 hrs in the crock pot 🙂 because I started it late last night KNOWING I would be unable to make it today due to LOTS TO DO! Soooo improvise, bend, work with it, still make it happen just maybe NOT like I planned, wanted or intended for it to happen and you know WHAT? It is OK. It worked out and in some ways it was even better getting it DONE EARLY.
I have found the technique of bending, working with "stuff", and improvising works REALLY WELL with all aspects of 'getting and living healthy and fit, inside and out'. Can't GET STUCK because stuff doesn't all just fall into place for you. Be willing to BEND some, change some things, maybe do stuff a little different today than you usually do. Yep go with IT! Alright lol back to the recipe.
So I saw this recipe on FACEBOOK. Big surprise there huh? Cave-Momma's Quest is the lady (community page on fb) I follow who posted this and well, it caught my eye. I have been wanting to use cabbage for a meal and so when I saw this recipe and it qualified in ALL my sacred areas, like it is EASY, relatively quick prep time, doesn't have foreign ingredients I don't know and I LIKE all the ingredients YEP it was going to be my Recipe FRIDAY. Look at those pics! Looks so healthy and delish. Here is the recipe that I copied and pasted right from a facebook post as I don't think Cave-Momma's Quest actually formally wrote this recipe out lol Below I will explain what I did the same, different and how it I thought it turned out for me.
cabbage roll casserole (crockpot) by Cave-Momma’s Quest
serves 4-5 (so double up if you live with teenage boys!)Ingredients: 1/2 - a whole large head of cabbage, chopped or sliced to your liking 1/2 onion, diced 3 tomatoes, diced 1 jalapeno, seeded and diced (optional, we like spicy) 1 pound ground meat of choice (we used deer) browned and drained 1 cup beef stock (or veggy or chicken if you like) 1 can tomato sauce (13 ounce can) 2 cloves garlic, minced salt, pepper, a dash of celery salt, a couple bay leaves, italian seasoning (basil, oregano, thyme), about 1/2-1 tsp each) Directions: Brown and drain your meat. While meat is browning, chop up all veggies needed and toss them in the crockpot. Pour your cup of stock over the top and then your tomato sauce. Sprinkle on all spices, and then top with the cooked and drained meat. Set on high for 3-5 hours, depending on your favorite cabbage consistency. If you're gonna be gone all day, on low for 6-8 should be okay too. If you want it quicker, do it in a skillet on medium/low for an hour or so. I like to walk away and forget about it and I have other crap to do, so crockpot it is! So I went to the farmer's market to get some cabbage, onions, tomatoes and jalapeno's and I was ready to go. What I loved about this recipe was that ALL I had to do was brown some meat, I used lean beef, cut up veggies and add seasonings into crop pot while meat was browning and then go. DONE! Come back later to a fabulous and tasty MEAL. Yes this is a MEAL. Another favorite thing I like is the dishes that are a meal-in-one. Not three things I have to prepare but a bowl with my protein, my carbs and my fats. YAY
Here is the finished meal right before I ate it. YES there is lots left over and the whole fam will be having this for lunch:)
