Southwestern Chicken in Foil
So I was up in upstate NY a week or so ago with my younger brother Stephan, the chef, and he did some cooking lol and inspired me to make this meal today and yes he did not even know it. YAY
If you have been following this blog at all, this Recipe FRIDAY, you know that I LOVE easy, healthy and delish MEALS. Yes the easier and tastier the better.
So I added quinoa as a side to this awesome, quick and easy meal. Here are the pics of my process.
Here is my recipe:
Southwestern Chicken4 or 8 chicken breast (how many folks 0r meals you are cooking for) 1/2 c black beans 1/2 cup salsa 1/2 c corn salt and pepper to taste Directions: Put chicken breast in center of foil. Salt and pepper chicken. I used sea salt and grinded my pepper. Put beans, salsa and corn on top of chicken breast. Fold over tin long wise and close and then the ends and keep some room for the steam inside. Cook at 450 degrees for 35 min or shorter time if breasts are smaller. My chicken breasts were about 5 oz each.
I know you might be thinking that it's just a chicken meal but, but, but it was FABULOUS and the chicken was so tender. AND easy and really WHY NOT MAKE IT. Even the kids liked it. YAY! This was the first time making this meal but I promise I just might be making this meal every week now. I also added a side of quinoa to the dish but it is not necessary.
