Baked Oatmeal Protein Banana
I am hung up on the oatmeal these past few weeks. Liking the easy recipes with ingredients already on hand and quick breakfast meals for me and the fam this next week.
So what I am saying is this week's Recipe FRIDAY is a can't lose recipe id you like the ingredients. It tastes great. It is made with healthy ingredients. It is a complete meal with protein, carbs and fats and it is QUICK to make. It is a MUST try recipe.
It is very similar to last weeks recipe, Oatmeal Cinnamon Protein Cake, but tastes a lot better. Last weeks recipe tasted good on its own and great with fruit. This weeks recipe tastes great on it own, with fruit or any which way you want to eat it 🙂

Baked Oatmeal Protein Banana CakeIngredients: 3 eggs 2 very ripe bananas 3 cups Old Fashioned oats 1 1/2 c low-fat milk, almond milk or any milk variation you prefer 1/2 c raisins, optional 1/2 c walnuts, optional 1/3 c honey 1/4 c coconut oil 3 scoops vanilla whey protein 2 tsp baking powder 2 tsp cinnamon 1 tsp vanilla Directions: 1. In a large bowl, lightly beat eggs. All all the remaining ingredients. Stir well. Let mixture set for 10 minutes for oats to absorb some of the liquid. 2. Preheat oven to 350 degrees. 3. Stir mixture once more and transfer to an 8x8 baking pan that's been coated with cooking spray. 4. Bake for 35 minutes. If still undone 10 more minutes checking often. (really depends on if you let the mixture sit for 10 minutes before putting in the oven). 5. To serve, cut into squares. ENJOY!

The absolute best test I have for my recipes is my kids and their friends. Here is the plate I served them while they were working out hard on their trampoline.
When I got the plate back it was empty. A sure sign that they loved them. My kids quickly ate the rest of them and now I have to make some more 🙂 Yes, that is a good problem.
