This is an EASY healthy recipe, a tasty recipe and you are going to LOVE IT if, IF you give it a try.

If you are a regular here to my blog site then you know already that I DO NOT LIKE to spend a great deal of time cooking BUT I do like to feed my family and myself healthy and tasty foods.

WHY?

Because I am into getting and keeping us all as healthy and fit as possible and I know that a lot of that comes from the foods we eat regularly.

Change it up sometimes!

Yep, sometimes you just gotta have some different tastes and that is where this regular blog post of Recipe FRIDAY comes in.

Most of us get in a rut and eat the same thing ALL THE TIME and lots of time those same things are NOT HEALTHY for us.

Maybe we don't know too many healthy easy recipes so ... then it is time to learn.

Time to try NEW things.

Or in this case learn and try NEW recipes once a week as I do here with these blog posts.

My belief is that most folks just don't realize HOW IMPORTANT what they eat all day, everyday is to their health but I am here to tell you it is HUGE on your journey to getting healthy and fit, inside and out. This weekly recipe is my way of helping you and me along on this journey.

On that note, here is today's NEW easy, healthy recipe. Be sure to give it a try.

Creamy Spinach & Black Bean Quinoa

Ingredients

1 c cooked quinoa
1 tbsp Olive Oil
1 clove garlic, chopped
2 c Baby spinach leaves
1/4 c Black Beans
1/2 c Low-fat Ricotta Cheese
1/4 c Parmesan Cheese
1/2 Tsp Black pepper

Directions

- Prepare Quinoa according to package directions

- Add a tbsp Oil into a large skillet over medium heat. Add garlic and stir 2 minutes. Add Spinach and continue to stir. Cook, stirring for 5 minutes. Add beans and hear for another minute. Remove from heat and place in a bowl with quinoa.

- Blend Ricotta, Parmesan and Black pepper in a blender or food processor until combined and smooth. Pour cheese mixture over Quinoa and mix well until evenly coated.

How did it turn out and what did we think about this healthy, delish and easy recipe?

LOVED it. Well, me and Lynn thought it was delicious but I had to practically bribe the kids to even try it and they were NOT to keen on it. Hmmm

Anyway I made this recipe last weekend and I have made it again since and seeing as the ingredients are regular food stuffs that I usually buy and have regularly on hand, I know I will be making it again.
