Healthy 4th of July Cake!
Yes, today is all about the 4th of July and celebrating our freedoms here in our awesome country.
So as I was thinking about an easy, healthy and tasty recipe that I could bring to the July 4th party we are going to later today and I got the idea to combine two different ideas (recipes) to create this picture here. A perfect 4th of July 'cake'.
First I saw this photo online at Taste of Home site and LOVED the idea of creating the American flag as a fruit cake BUT the frosting dressing was a little too much for it to qualify as a HEALTHY dessert.
Hmmmm what to do?
What kind of frosting could I put on it to make it healthy?
Yep, thought about a past Recipe FRIDAY - Watermelon Cake and the 'frosting' I used on that with coconut milk, honey and vanilla.
So with all that in mind here is my recipe:
Healthy 4th of July Cake4 16 oz containers of Strawberries (or 2 32oz) 1 32 oz container of blueberries 4 Full fat Coconut Milk 2 tbsp honey 1 tsp Vanilla 1. clean and cut strawberries 2. clean blueberries 'Frosting' Directions 1.Put cans of Coconut Milk in frig for 6 up to 24 hours before making recipe 2. Open Coconut cans from bottom to drain out parts that did not solidify in can. Yes we are looking for the solid part. 3. Put solid part in bowl, add in honey and vanilla and whip on high for a bit. 4. Then layer your cake pan with 'frosting', blueberries and strawberries. 5. Keep in frig until ready to eat.
