Healthy Pumpkin Oatmeal Bites
Once again I am writing about some healthy choices, Healthy Pumpkin Oatmeal Bites, for meals that maybe you didn't think about during your adventure while getting healthy and fit.
I have heard, repeatedly, while personal training folks over the years, that healthy food just does not taste good. Or that you have to eat the same thing over and over again. So with that in mind I started Recipe FRIDAY.
Yes, a regular weekly post with healthy and delicious meals that anyone can make that you and YOUR FAMILY are sure to love. With lots of variety and lots of choices.
Here is the recipe for this week which BTW is a recipe that I originally saw on facebook from Real Food Simple. Yes, I changed it a little to make it a little different.
YES, I added the Vanilla Whey Protein and an extra egg to make it a healthier (whole meal) version ....

Healthy Oatmeal Pumpkin Bites1 c pumpkin puree (100 % pumpkin) 2 Tbsp Coconut oil 1 Tbsp pumpkin pie spice 2 Tbsp honey 3 eggs 2 scoops Vanilla whey protein 2 1/2 c rolled oats (NOT instant oats)
DirectionsPreheat oven to 350 degrees. Line a cookie sheet with wax paper. Combine all the ingredients in a bowl. Roll the dough into balls. Bake at 350 for 12-15 minutes.

My daughter Erica helped me ALL THE WAY with making these healthy bites. Her and my son, Brent at them up like crazy as soon as they came out of the oven. YES I had to tell them to leave some for my pics for this blog post lol.
