Italian Style Beef Stew
So I was looking for a steak meal that was easy, tasty and healthy and stumbled upon this one.
As you can tell if you've followed this blog for any length of time, I am a carnivore. AND I don't think red meat has to be off the recipe table completely while trying to live a healthy and fit lifestyle.
If you are craving some red meat then be sure to give one of these healthy recipes a try. Today's is a good healthy recipe that fits my criteria with being EASY, QUICK and HEALTHY. YAY!
Italian Style Beef StewIngredients: 1 onion, sliced 1 garlic clove, sliced 2 tbsp olive oil 10 1/2 ounces top sirloin beef, cut into thin strips 1 yellow pepper, deseeded and thinly sliced 1 32 ounce can chopped tomatoes sprig rosemary chopped handful of pitted black olives Directions: In a large saucepan, cook onion and garlic in olive oil for about 5 minutes until softened and turning brown. Slide in the beef strips, pepper, tomatoes and rosemary, then bring to a boil. Simmer for 15 minutes or longer if beef strips are large until meat is cooked through, adding some water if necessary. Stir in the olives and can be eaten on own or poured over rice or potatoes.

I will tell you since I started this weekly NEW recipe adventure sometimes I get lucky and the kids end up liking/loving the recipe too. This recipe here was one of those times. BOTH my kids ate their whole bowls of this delish Italian Style Beef Stew and in my book, that makes this recipe a winner and one that will become a somewhat regular meal for us. Especially in the winter months.
