Today's Recipe FRIDAY is Pumpkin Chili an easy, healthy and delicious recipe.
Yes we are still in October, which for this year, I have dubbed the month of the pumpkin. Every Friday this month I have posted a healthy, easy and tasty PUMPKIN recipe that anyone can make.
This Pumpkin Chili Recipe comes from my very good friend and our personal and Tax Accountant, Doris Locks. Great woman who is a much better cook than me 🙂 Here are a couple of pics of my process and I will follow with the recipe but before I do, I have to tell you, after eating 2 bowls of this, this is by far the VERY BEST CHILI I have ever made.

Here is my good friend Doris' Pumpkin Chili Recipe
Ingredients:4 cups water 1lb turkey burger
1 (15-ounce) can canned crushed tomatoes
1 (15-ounce) kidney beans, drained
1 (15-ounce) can pureed pumpkin
1 cup chopped onion
1 cup chopped red bell pepper
1 cup medium salsa
1 tablespoon chili powder
1 teaspoon minced garlic
1 teaspoon cumin
1 teaspoon salt Directions: 1. Put turkey burger in a saucepan and brown. 2. Place all ingredients in a large saucepan, stir and bring to a boil over high heat. 3. Reduce to medium-low and simmer and covered for 35 minutes.
I have to say I only changed two things with this recipe. First I doubled it so I can freeze some for a later date and second I used white beans for my second 15 oz can instead of kidney beans as I only had one can of red beans.
The great thing about cooking is to experiment and use what you have to use. Set out to try NEW tastes and flavors or maybe old tastes but with a new twist which this Pumpkin Chili is for me. This is by far the best CHILI I have ever made and I would never have thought to put salsa in it or even pumpkin ... TODAY step out and give NEW recipe a try. Who knows, you just might LOVE IT and make it regularly from now on 🙂
