Pumpkin Ice Cream

We are still in the month of the pumpkin so this week's Recipe FRIDAY will be Pumpkin Ice Cream. YAY!

I don't know about you but this weekly stepping out and trying NEW recipes is a great way to add new flavors and food experiences into your life and you can do it right in your own kitchen.

Often I have heard that this EATING HEALTHY is too hard because healthy food just doesn't taste good... WHAT?

YES, and this is where the idea for Recipe FRIDAY  originated.

All the folks over the years constantly telling me that there aren't any good tasting healthy foods to be had.

If you are one of those folks be sure to check out some of my other Recipe FRIDAYS that I have been posting over the past almost 3 years here.  I am sure you will find a few you just might want to try and continue to make regularly.

All the healthy recipes I review or make are almost always EASY, simple ingredients, tasty and healthy for you too. So today or this weekend step out of your eating box and try something new 🙂 I promise you won't be disappointed.

Here are my pictures while making Pumpkin Ice Cream this am:

Here is the RECIPE:

Ingredients:

4 frozen bananas
3/4 cup pumpkin puree
1/8 cup full fat coconut milk
1/2 teaspoon of pumpkin pie spice
 

Directions:

1. Put the pumpkin, coconut milk, and pumpkin pie spice in a food processor.
2. Pull out the frozen bananas from the freezer and slice in chunks.
3. Process all ingredients until the mix is smooth like ice cream. YUM!
 

LOVED it. Will find out later how the rest of the family likes it but I am thinking they will love it too.

It did not come out as solid as I would like so almost like a very cold pudding or a very thick smoothie. I ate quite a few bites and then put it back into the freezer and will give the rest of the family some later. It will be much more solid than and if you like it more solid like ice cream maybe putting it back into freezer for a while will do the trick.

But that is another story. 🙂 This recepie looks wonderful since I love pumpkin. But, I am deathy allergic to coconut and any coconut product. What, if anything, can I substitute? Thank you for any help. Keep up the wonderful inspiration.

    • Hi Lori, you can try plain fat-free or low-fat yogurt or even try it without either.
