Yummy Quinoa Meal!
Looking for an awesome recipe that uses Quinoa? Look no further. Found this recipe last year sometime and ran across it again going through my papers and just had to finally give it a try.
This recipe has my usual requirements.It is easy to make. It has ingredients I like and recognize and I had all the ingredients already in the house to make it. Doesn't get much better or easier than that 🙂
Also this recipe could be a side dish or a meal like it was for me.
Here is the recipe:
Cranberry-Walnut Quinoa Pilaf1 cup quinoa 2 cups water 1 tablespoon Olive Oil 1/2 c dried cranberries 1 teaspoon lemon juice 2 teaspoons honey Freshly ground black pepper 1/2 c walnuts
1. In a medium saucepan bring the quinoa and water to a boil over medium heat. Lower heat and let simmer for 15-20 minutes. Fluff quinoa with a fork and let cool slightly.
2. Meanwhile, in a large mixing bowl, combine the oil, cranberries, and lemon juice. Season with pepper and top of with toasted walnuts. (toast walnuts by putting in oven on cookie try at 400 degrees for 5-10 minutes.)

So how did it turn out?
We LOVED it!
Oh my gosh! I couldn't stop eating it and it was finished by the fam that night. I will def have to quadruple the recipe next time so we have some PLANNED OVERS.
Looking forward to making it again this weekend and putting the meal or side dish on our regular weekly menu plan.
Quick to make. Easy to make. Healthy and nutritious and you should give it a try yourself. Great beginner recipe to get your feet wet cooking quinoa.
