Spinach Cheese Pie

Had some ricotta left over from last week that I wanted to use up before it went bad and conveniently came across this Recipe.  All ingredients on hand, simple recipe and it was a go.

It meets all my usual standards.

It has ONLY 4 ingredients. Didn't add the bell peppers.

It looks VERY easy. And was very easy.

Lastly, all ingredients are healthy too.


Here is the Spinach Cheese Pie Recipe


1 (10 oz) bag fresh spinach - rinsed, dried and torn into bite size pieces
1 (24 oz) carton Ricotta Cheese
1/2 c grated Parmesan Cheese
3 eggs, beaten
1/4 c chopped red bell peppers



Preheat oven to 350 degrees F. Grease a 9 inch deep-dish pie pan.
In large bowl, stir together the spinach, ricotta cheese, parmesan cheese, eggs and bell pepper. Spread in the prepared pan so that it is a little thinner in the middle.
Bake for 40-45 minutes until center is set and the edges are lightly browned.

So HOW did this recipe turn out?

LOVED IT! In fact, could NOT stop eating it. Absolutely delish and can be made with cupcake tins and made into little bite size grab and go meals. Will be adding this recipe to my collection of weekly, healthy meals to buy for and prepare.

I highly recommend this recipe if you like the ingredients. It took no time at all to make and it was well worth the effort.
