Sweet Potato Donuts & Cucumber and Tuna Sandwiches
So I had a dilemma this week. Two recipes I really wanted to try out but only one Recipe Friday blog soooooo YEP I made both. Now if you know me at all you can be sure that both these recipes are EASY, QUICK and not very fussy to make. The Sweet Potato DONUTS I actually saw on someone's post on Facebook and decided then and there that I WOULD make them. Short ingredients list, most ingredients healthy and not too many steps and YEP they just SOUND delish 🙂 The Cucumber Sandwich came about due to Pinterest and a photo on there with a long Cucumber Sandwich with dressing and lunch meat in the middle and as I was looking at it I thought hmmmmmm don't want the lunch meat or the TON of dressing but maybe like cucumber as the BREAD but not long and thick like picture and well, so as you will see below I came up with MY VERSION of a Cucumber Sandwich with Tuna inside.
I did have to go to the farmer's market and buy both cucumbers and sweet potatoes. No problem as I go every week to the farmer's market for my produce. Basically I created the cucumber sandwiches as I thought we would like them. As you notice in the picture I did NOT just slice the cucumber long-wise and throw some stuff in the middle. Didn't want a thick cucumber sandwich. I like cucumbers but not that much. I opened 2 cans of Albacore Tuna added Miracle Whip as I did not have ANY OTHER MAYO in the frig. Also included onions, celery and mustard. Just stuff I knew LYNN and I would like. Now the kids - I made a separate bowl without onions and celery. You know Lynn and I really, really can't believe we have two kids that HATE onions. Urrrghhhh!
So like I said I used Miracle Whip and only a large Tablespoon. Would probably use Hellman's in the future. By the way, if I use condiments I use the regular ones NOT usually the fat free or low-fat versions. Too much CRAP in them and I use very little soooo They were EASY, just a few ingredients, quick and TASTY. I ate 3 of these little sandwiches and was full. Also this could be a great appetizer plate to serve when you have company over. Here is MY RECIPE and a picture of the finished results.
Cucumber & Tuna SandwichOne large cucumber (yep I still have one left over for future sandwiches lol) 2 or more cans of Albacore Tuna 1 whole onion diced 1 celery stick diced couple squirts of mustard once over with Black Pepper Large Tablespoon of Miracle Whip
Mix all ingredients except cucumber. Slice cucumber into thin slices. Put Tuna mix in between cucumber slices and DONE. Time to eat!!
Now onto the really, really good stuff. I have to say when I read this recipe on someone's fb page and I am sorry I do not remember who it was, but I thought YUMMY. If these really taste good this will be a home-run with the kids and me and Lynn. Not surprisingly the kids wanted NOTHING to do with helping with the Cucumber and Tuna Sandwich's but when it came time to making Sweet Potato DONUTS???? WOW the fighting began. Who is getting to do what sooo yep had to ASSIGN steps to survive this cooking session. Here are the kids with the ingredients and just getting ready to combine them all and get to 'making the donuts'.
You wouldn't know it from these pictures but these little angels were fighting for tasks to do just one minute before this picture. lol So if you notice I already have the sweet potato cooked and mashed in the bowl. Also the recipe asks for oat or wheat flour but I only had white flour sooooooo And the last bit of creative license I took with this recipe was to include a Protein Shake - VANILLA to replace the vanilla protein powder in the recipe. Really when I cook it really is about using what you have and MAKING it work. Lol It worked. This picture is my son mixing with his hands the dough mix.
In case you did not know this, this was TOP job that they BOTH really, really wanted to do. Brent won it today and as you can see Erica really wanted to get her hands in there too. I don't remember WHO posted this recipe but it is from MuscleEgg.com! Sweet Potato Donuts1 ½ cooked sweet potatoes ½ cup vanilla protein powder ½ cup whole wheat or oat flour 1 tsp salt 1 tsp cinnamon 2 tsp baking powder
Preheat oven to 410.
Combine the above ingredients into a dry dough (depending on the type of protein powder you use you may have to add more flour).
Form 10-12 balls and place on a greased cookie sheet. Form a hole in the middle of each donut.
Bake 15-20 minutes until fluffed and golden brown.
Set on a cooling rack until completely cool.
Mix the glaze:½ cup splenda 1/3 cup water
Boil until thickened slightly, do not stir. Dip both sides of the donut in the glaze and set back on the cooling rack to cool.
OK so I made the glaze but I used stevia and water as that is all I had for sugar substitutes. It did NOT REALLY get thick but I still stuck the finished donuts in and put them on the platter. Here is a picture of them out of the oven followed by the finished product with a glaze you can't see on them.
Can you guess? It was a HIT! In fact Lynn and I had to get the kids to STOP eating them all so we have some for later. Healthy and delish - WOW what more can you ask for? They also did not take long to make. Maybe 10 minutes putting the ingredients together and 20 min to bake. Cool down and dip into the sugar substitute and DONE. This recipe will be a family favorite. And I will for sure make these when we have company staying over. Everyone will love these and they are HEALTHY! Here are the kids getting ready to CHOW DOWN!
