Banana Pumpkin Egg Muffins

Looking for a NEW, easy and healthy recipe that absolutely anyone can follow?  Then here is one for you.  I stumbled across this high protein and tasty recipe on Facebook. The name of these delish muffins? Banana Pumpkin Egg Muffins.

As name states it has pumpkin in it which is the main ingredients for all future recipes for the month of October so be on the lookout if you are a PUMPKIN lover.

The reason this recipe caught my attention is:

a) it has all healthy ingredients

b) it is quick and EASY and

c) it is THE PERFECT grab and go meal.

YES you read that correctly, it is THE PERFECT grab and go meal.

I LOVE these kinda recipes because without fail almost everyone I talk who is trying to get and live healthy and fit often proclaim that THEY JUST CAN'T FIND THE EASY, HEALTHY foods or recipes to keep them eating healthfully. Viola so here it is ...

EASY PEASY!

And here is the recipe:

Banana Pumpkin Egg Muffins

Ingredients:

1 cups of  egg whites +2 whole eggs
1/2 cup large flake oats
1 banana
1/2 cup pure pumpkin
2 tsp pumpkin pie spice
1 tsp baking powder
cinnamon

Directions

-Preheat oven to 375 degrees.
 -Grease muffin tin with coconut oil or nonstick spray.
 -Place everything in a blender and blend until combined.
 -Pour mixture evenly into prepared pan and sprinkle each with more cinnamon.
 -Place in the oven and bake for 20 -25 mins or until golden brown and firm to touch.
 -Cool for a few minutes in pan.

So how did these muffins turn out?

I LOVED them as they are what they claim to be.

A healthy grab and go meal that anyone can make with few ingredients and in a short period of time.
