Chocolate Pumpkin Protein Fudge

I don't know about you but I LOVE fudge. When most of us think we are going to 'get healthy and lose some weight' we tend to think, so long fudge or really anything chocolate right?

But no, that is just not so.

Sometimes you can have your cake and eat it too 🙂 or fudge in this case.

Here is this week's Recipe FRIDAY. A great example of a healthy, easy and delish alternative to the traditional fudge we all know and love.

And that is it. Took a whole, max, 10 minutes. Put in fridge for 30-60 minutes and time to indulge.

So after I made this and went to try it I was a little apprehensive as sometimes when making these 'healthier' alternatives it doesn't always taste right. Or it will just be off and taste healthy and hmmm that sorta defeats the purpose of LOVING the foods we eat right?

Not so with this recipe.

Here is the recipe and BTW I had everything on hand so no trips to supermarket necessary YAY!

Chocolate Pumpkin Protein Fudge
Ingredients:
1/4 c pure pumpkin puree
1/2 c softened coconut oil
4 scoops chocolate whey protein
2/3 c coconut flour
3 tsp pumpkin pie spice
1 tsp vanilla extract
1 tbsp stevia
1/4 c milk
pinch salt
Optional toppings: I used coconut and slivered almonds but use whatever  you like and have on hand
Instructions:
Line a pan with parchment paper.
Place all ingredients besides toppings into a food processor or blender.
Blend.
Spread batter over pan and top with toppings if desired.
Freeze 30 min or refrigerate 60 minutes.

Keep refrigerated.

Easy Peasy!

That's all there is folks.

I will tell you the blending part took some work. Had to get in there with spatula and work through the batter as it was really thick. So don't be afraid to do the same.

Rating this recipe a 10 all around. Even the kids liked it. YAY
