So a client of mine had a birthday this week and I decided to surprise her and make her a healthy alternative to a birthday cake. Yes, my Protein Chocolate Muffins. YUMMY She loved it 🙂

I mean just LOOK at them. If you are thinking, 'do they taste as good as they look?' that would be a HECK YEAH!

I made them last night for my just turned 65 year old client and am making them this week's Recipe FRIDAY so you all will have an opportunity to try them out yourself this weekend.

12 muffins were made with this recipe and aside from giving one to my client and 2 muffins to my next door neighbor (yes, she gets to try all my recipes - the good and the bad) and I ate 1/2 of one the KIDS DEVOURED ALL THE REST last night and finished them off this morning for breakfast.

When the kids can't stop eating them I know they are incredible. It really just means they don't TASTE healthy.

I don't know about you but when I come across a fantastic recipe that everyone in house LOVES that means it is time to share so you can try it too.

Here is the recipe!

Protein Chocolate Muffins

Ingredients
  • 12 large eggs (10 whites and 2 whole eggs)
  • 2 1/2 scoops chocolate whey protein
  • 15 packets Stevia packets
  • 3 Tsp ground cinnamon
  • 1 1/2 tsp baking powder
  • 1 TBSP cocoa powder
  • 2 tsp vanilla extract
  • 1 1/2 tsp nutmeg
  • 1 C pumpkin puree
  • 1 C rolled oats
  • 96 Semi-Sweet Choc chips (8 per muffin)
Directions
  • Put all ingredients in a food processor or blender and blend all together except the chocolate chips.
  • Use non stick on muffin tin.
  • Pour batter in muffin tin and top with choc chips.
  • Bake at 350 for 20 - 22 min.

And that is it folks. A nice, easy recipe that is a quick clean up too. YAY

Did I tell you how INCREDIBLE these turned out? Yep, already all gone in my house. Kids already told me that I have to make these regularly and I will.

It is interesting when you look at the ingredients as you might think they will taste like egg as that is the main ingredient but NO. You don't taste the egg but instead the spices and choc which is what makes this such a great high protein, low carb and healthy snack or breakfast choice.
